Bella Colibri honors Colorado’s rich Italian roots and the story of founder Dean Valdez, whose family journeyed from Calabria, Italy, to Colorado in the early 1900s.
Our menu, curated by Co-owner and Executive Chef John Wilson, features inspired interpretations of Southern Italian classics, with a focus on simplicity, seasonality, and bold, honest flavors.
